0:23 Here’s we’ll need six pounds of cucumbers as fresh and crispy as possible the Skinnier, the better because you want the smallest possible seed cavity.

0:30 Elements:
Two big sweet onions like as Vidalias or Walla.
One large sweet red pepper.
One-third of a cup of kosher salt.
Four and a half cups of sugar.
2 cups of white vinegar and cup cider vinegar
two whole garlic cloves peeled
One and a half teaspoons turmeric
One and a half teaspoons celery seed
Two tablespoons mustard of seed
A half a teaspoon of hot pepper flakes
A large bowl and a glass measuring cup
A ladle measuring spoons
7-pint canning jars with lids and rings
A canning funnel
A water bath or steam canner with a rack
A jar lifter and a timer

1:18 The cucumbers well and cut out any damaged parts. Cut them into quarter-inch slices and put them in the bowl.

Slice the onions and peppers and put those into the bowl as well and add the whole garlic cloves.

1:34 Sprinkle them with salt and toss with your hands.

1:37 Cover the vegetables of ice cubes and let them stand at room temperature for 3 hours.

1:43 Pour off the liquid and remove the garlic cloves.

1:50 One minute in boiling water fill the canner two-thirds full of water. Start heating it up now. Sterilize the lids by putting them in a bowl of boiling water for a minute.

2:03 Combining the vinegar, sugar and spices and heat to boil then add the drained vegetables.

2:13 Now vegetable and simmer them together for 10 minutes.

2:28 Top each jar with a little more brine so the level is about three-quarters of an inch from the top of the jar wipe. The top of each jar very carefully with a damp paper towel to remove any drips or bits of cucumber the rims need to be completed clean and dry to ensure good seal dry each lid and set one on top of each of the clean jar.

2:58 Now each jar into the hot water keeping the jars upright. When the canner is full add more hot water. Put the cover on and turn up the heat once the water comes to a vigorous boil for next 10 minutes.

3:32 After do that let them sit undisturbed for 12 to 24 hours. All the jars have sealed by tapping. Now it’s time to taste your bread and butter pickles.
